Stir-Fried Choy Sum In Oyster Sauce 蚝油菜心

 


Crunchy choy sum

Ingredients :

500g Choy Sum
1 tbsp fried shallot oil  ( optional )
1 tsp lye water / kan sui
3 tbsp cooking oil
1 tbsp minced garlic

Seasonings :

4 tbsp oyster sauce 
1 tsp salt
2 tsp sugar
Mix the above in 1 rice bowl of water. (solution A)

For thickening :

Mix 1 tsp cornflour with 1 Chinese soup spoon of water and place in another bowl (solution B)

Preparation

1. Pluck away the yellow leaves. Trim the stems and leaves
2. Wash the choy sum thoroughly and drain away the water
3. Bring half a pot of water to boil
4. Add the lye water/kan sui
5. Blanch the choy sum in the boiling water for 5 minutes. 
6. Discard the hot water and rinse the parboiled choy sum with cold water
7. Heat  wok and add in the cooking oil and saute the minced garlic till fragrant
8. Add in solution A and bring to boil
9. Add in the par boiled choy sum and stir rapidly to mix choy sum with solution A. If the water is insufficient you can add a further 1/2 bowl. Bring to boil and add solution B. Let it boil for another minute. Lastly, add in the shallot oil
10.Dish up and serve
